SMOKED HABANERO MONK SAUCE


Made with Habanero peppers grown in the gardens of Subiaco Abbey by the monks from seeds brought back by Fr. Richard from their mission in Belize. Their heat is enhanced by the hot and dry Arkansas summer and the cool and moist Arkansas fall.

The harvested peppers are layered in a brick oven and slowly smoked using a wood fire for the best flavor possible, then combined with vinegar, onions, carrots, garlic and salt. Careful cooking, cooling, and blending (along with prayers by the monks) produce a pepper sauce that is not only massively hot - at 250,000 Scoville Units -- but also intensely flavorful.

Unlike larger producers, who reduce the proportion of peppers in their sauces to maximize profits, Subiaco Abbey's Monk Sauces are absolutely jam-packed with Habanero peppers!

Subiaco Abbey is an American Benedictine monastery located in Subiaco, Arkansas and is part of the Swiss-American Congregation of Benedictine monasteries. It is home to thirty-nine Benedictine monks. The abbey and the preparatory school it operates, Subiaco Academy, are major features of the town, which is named after the original Subiaco, Italy, where the first monastery founded by Saint Benedict was located.

Subiaco was founded from St. Meinrad Archabbey in 1878 to serve the German immigrant population then settling the area. The Abbey has developed commercial enterprises including breeding of black Angus cattle, a brewery and taproom, and its own Monk Sauce brand of hot sauces.
