What do nuns eat? Only bread and water on Ash Wednesday and Good Friday --- but the rest of the year is perhaps more interesting than you might think! At Tautra Convent, on a fertile island in the Trondheim fjord in Norway, the internationality of the community makes for unlimited experiments in fusing Norwegian, American and Chinese food and monastic culture. Sister Sheryl Frances Chen, OCSO, who says that "a good appetite is a sign of a Cistercian vocation" offers over 70 recipes for soups, fish, vegetarian dishes, salads, breads and desserts.

Recipes (enthusiastically tested in the refectory) include Egg Drop Soup, Salmon-Spinach Lasagna, Vegetable Fritters, Asparagus-Mandarin Salad, Cheese-Rosemary Bread, Caramel Cookies and dozens more.
