Trappistes Rochefort 6 (Red Cap, ABV 7.5%) has a reddish-brown color with amber-gold highlights, like autumn leaves; soft body supports earthy flavors and an herbal character. Refined, soft spiciness in the bouquet finishes with an intense taste of caramel, fruit, and hints of raisins. It is bottle-conditioned with live yeasts for soft natural carbonation. The aroma has elusive notes of fresh fruit, spice, leather, figs, and a hint of smokiness in cascading layers. The flavor is deep, vigorous and complex, with date, raisin, caramel, and brown sugar notes accompanied by spicy coriander, nutty yeast, and a drying, herbal hoppiness. It has a firm, silky and creamy body. Like many strong Belgian beers, Trappistes Rochefort 8 ages well and can be cellared for at least five years while maintaining quality. The bouquet covers a wide range: port wine, leather, apricots, oak, spices and a touch of bittersweet chocolate. It feels like honey in the mouth. The alcohol profile is a major component in the flavor of this rich ale, one of the world's most intriguing beverages.
